Okroshka is a delicious cold soup originally from Russia. It's a cold summer soup that is traditionally made with fresh vegetables, hard boiled eggs, cooked meat, herbs and milk kefir. It's very light and refreshing meal on a hot summer day. The contrasting textures of the crisp fresh vegetables with soft hard boiled eggs and the smooth, foamy, ice cold kefir make it a lovey summer dish.
The versions of this soup is endless, it can be made vegetarian as a starter for dinner or it can be a light meal with the vegetables and the meat, it can also be enjoyed as a snack, the soup can be refrigerated for up to 2 days and while it's absolutely delicious freshly made, keeping it in the fridge for a few hours guarantees that all the flavours will meld really nicely.
The version below is vegetarian
- 4-5 radishes, thinly sliced
- 1 potato, boiled and diced
- 1/4 cup cucumber, diced
- 2 hard boiled egg, diced, sliced or grated
- 1-2 green onions, thinly sliced or 1/8 red onion, diced
- Dill, mint, basil or any other dried or fresh herb
Arrange the vegetables and hard boiled eggs in a bowl, season generously with salt and pour cold kefir over the vegetables. The dish can be enjoyed as soon as you put together but it can also stay in the fridge to be for later.
